Chicken Jalfrezi Recipe

Ingredients:

  • 500g boneless chicken, bite-sized
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2-3 green chillies, sliced
  • 2 garlic cloves, minced
  • 1 tsp ginger paste
  • 1 tsp each of cumin and coriander seeds
  • 1 tsp turmeric, red chilli, and garam masala powder
  • 3 tbsp vegetable oil
  • Salt, as needed
  • Chopped fresh coriander for garnish

Method:

  1. In a pan, heat oil. Add cumin and coriander seeds, frying until they splutter.
  2. Sauté onions until golden. Add garlic and ginger, frying until the aroma fades.
  3. Stir-fry chicken until browned.
  4. Add bell peppers and chillies, cooking until tender.
  5. Stir in turmeric, chilli, garam masala, and salt. Cook until chicken is done.
  6. Garnish with coriander. Serve with rice or naan.

Ingredients:

  • 3 tbsp oil
  • ½ tsp cumin seeds
  • 1 green chilli, slit
  • ¼ tsp turmeric
  • ½ each green, red, and yellow bell pepper, sliced
  • 1 roma tomato, sliced
  • ½ cup each baby corn, carrots, French beans, cauliflower, sliced or cut
  • 1 tsp ginger-garlic paste
  • 2 onions, sliced
  • 1 tbsp tomato ketchup
  • 3 tbsp tomato puree
  • 1 tsp red chilli powder
  • ¼ cup sweet corn kernels
  • ½ cup paneer
  • 2 tsp salt
  • ½ tsp garam masala
  • ⅛ tsp each nutmeg and green cardamom, ground
  • 2 tbsp kasuri methi, dry roasted and crushed
  • 4 tbsp fresh coriander, chopped

Method:

  1. Blanch baby corn, beans, cauliflower, carrots, and corn. Set aside.
  2. Heat oil, add cumin and green chilli. Stir in ginger-garlic paste, then onions until transparent.
  3. Add tomato puree, ketchup, turmeric, and red chilli powder. Cook for a minute.
  4. Sauté bell peppers and tomatoes for two minutes.
  5. Mix in salt, spices, kasuri methi, and blanched veggies. Cook covered on low heat.
  6. Add paneer, cook briefly. Garnish with coriander.
